INGREDIENTS:
dried cauliflower
dried chickpeas
olive oil
pita bread
salt & pepper
dash of chipotle chili powder
two dashes of cumin (one dash for the veggies, and another for the yogurt)
dash of garlic powder
half a lime, juiced
half cup of greek yogurt
handful of fresh cilantro
HOW TO MAKE IT:
Preheat the oven to 425 degrees.
Dry the cauliflower and chickpeas and spread on a baking sheet.
Drizzle the veggies with olive oil and sprinkle with spices.
Roast for 35-40 minutes, mixing them around halfway through.
In a bowl, mix together greek yogurt with lime juice and cumin (if you're like me and love sour cream, this is a healthy alternative).
Load the veggies onto a piece of pita bread, pour the yogurt sauce on top, and finish with some cilantro.
