Roasted Veggie Pitas with Greek Yogurt Sauce

This recipe is everything! It has all the satisfaction of a burrito, but it's so much healthier. The veggies are crunchy with a spicy kick, and the greek yogurt sauce adds moisture. If you're looking for a satisfying meal, definitely give this recipe a go!



INGREDIENTS:

  • dried cauliflower

  • dried chickpeas

  • olive oil

  • pita bread

  • salt & pepper

  • dash of chipotle chili powder

  • two dashes of cumin (one dash for the veggies, and another for the yogurt)

  • dash of garlic powder

  • half a lime, juiced

  • half cup of greek yogurt

  • handful of fresh cilantro

HOW TO MAKE IT:

  1. Preheat the oven to 425 degrees.

  2. Dry the cauliflower and chickpeas and spread on a baking sheet.

  3. Drizzle the veggies with olive oil and sprinkle with spices.

  4. Roast for 35-40 minutes, mixing them around halfway through.

  5. In a bowl, mix together greek yogurt with lime juice and cumin (if you're like me and love sour cream, this is a healthy alternative).

  6. Load the veggies onto a piece of pita bread, pour the yogurt sauce on top, and finish with some cilantro.
