Ingredients:
A few slices of brioche bread
3/4 cup heavy cream (or other milk of your choice)
3-4 earl grey teabags
2 eggs
A sprinkle of pumpkin pie spice
A few slices of butter for frying
A handful of blackberries and blueberries
A few squirts of lemon juice
1-2 teaspoons of sugar
optional: more pumpkin pie spice
a drizzle of honey
First things first, bring your heavy cream / whole milk / oat milk—whatever kind of milk you want—to a boil. Then, remove from heat and add your teabags. Let the teabags soak for several minutes and then ring them out until your milk turns to a nice mocha color. Set aside to cool a bit.
Crack your eggs in a small dish. Temper your egg!—add the milk mixture to your eggs slowly, beating the egg in between. Then, you can add your eggs to the milk (slowly raising the temperature of the egg will prevent it from scrambling).
Slice a few pieces of brioche bread and sprinkle each side with pumpkin pie spice. Then, dip your bread in the egg mixture, and add to a frying pan with butter.
While your french toast is cooking, coat blackberries and blueberries with lemon juice and sugar to give them a shimmering glaze. You can also add more pumpkin pie spice here for even more flavor.
When your french toast is finished cooking, stack on a plate, and add your berries on top. Drizzle with honey and enjoy!
